Why Not Have A Girl's Night On A Tuesday? We Hung Out At Fat Rosie's Taco And Tequila Bar For National Tequila Day
There is no greater combo than tacos + tequila!
A group of city girls ventured to the burbs and celebrated National Tequila Day, a day early!
Fat Rosie’s Taco and Tequila Bar invited us out for a special menu preview on the eve of National Tequila Day. Let me just say, it was a night we will never forget. The atmosphere and all of the details put in to every aspect of Fat Rosie’s is eclectically designed, from the talking donkey on the wall to the surprise guest in the bathroom!
I have to give major props to Fat Rosie’s for creating a special meal for my extensive dietary restrictions, but they were up for the challenge and created a delicious spread of vegan, corn free, and onion free apps and entree. The mango margaritas were incredible!
We spent hours laughing and eating and drinking and living life together and we will definitely be back for another girl’s night soon.

We had quite a spread throughout the night, but I will be highlighting the vegan options that they have with the corn/onion free modifications they made.
Apps:
Salsa and you guessed it! GUACAMOLE.
I love guacamole, but when I go out and don’t have my corn free tortilla chips available, I often don’t get to enjoy it because… there is nothing to scoop it with! Fat Rosie’s brought out cucumber slices for me, which is actually one of my favorite ways to eat guacamole! It is so cool, crisp and refreshing on a hot summer night.
Entree:
For my main meal, Fat Rosie’s create a vegan fajita platter full of my favorite veggies. I had a sizzling plate of cauliflower, a mixture of bell peppers, and zucchini. This platter would have been delicious enough on its own, but they had flour tortillas! This is one thing that can be so hard to find in many restaurants where corn reigns supreme. It was such a big platter I had a lot left over for lunch the next day!
Drinks:
They make a delicious frozen mango margarita! Mango is my absolute favorite fruit, I don’t often drink. I am just not a fan, but the mango margaritas were so good, that I made an exception and had two!
